Dishwasher has a hot water sanitizing rinse - 71 C measured inside the machine - good.
Hand washing sink has liquid soap and paper towels.
No hot holding today.
Sauces are cooled using an ice water bath as per operator.
Cleaning has improved. Continue with regular cleaning.
