Observation: 1. Spilled cheese observed in salad dressing prep cooler.
2. Dust, possible mould, and debris build up on walk in cooler condenser box and fan cover, as well as above door where wall meets ceiling.
Corrective Action(s): 1. Clean spilled food. Correct today.
2. Clean walk in cooler. Correct within one week.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Prep cooler on cookline is leaking. According to manager, some days are worse then others. Temperature is 4C.
Corrective Action(s): Fix leak. Correct within two weeks.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: 1. Front shelf piece of main hot holding unit is cracked on both ends. One end is sharp and the other has duct tape on it.
2. Some wall space behind dishwashing sinks still uncovered.
3. Microwave shelf still has not been replaced.
4. A group of tiles on cookline are missing and gaps are filled with water due to leaking prep cooler. A tile is also missing at back kitchen door, and at top of staircase.
5. Some caulking/seal is missing or set back between entrance door wall and ceiling of walk in cooler.
Corrective Action(s): 1. Replace front piece of hot holding unit for worker safety and to prevent bacterial growth. Duct tape is not an acceptable material in kitchens. Correct within two weeks.
2. Finish covering the walls behind the dishwashing sinks with stainless steel. Correct within two weeks.
3. Install new stainless steel microwave shelf. Correct within two weeks.
4. Install tiles so that whole kitchen floor is covered for worker safety and to allow for adequate cleaning.
5. Reseal area. Correct within two weeks.

Routine inspection:
-laundry tub sink replaced with three compartment stainless sink
-stainless steel put up on walls behind three compartment sink and two compartment sink
-dishwasher sanitizing at 50ppm chlorine
-chicken wings being thawed in cold water at time of inspection - ensure that cold water is changed out frequently or leave cold water tap running
*hot holding units at >60C and re-heating procedures discussed with staff - ensure probe thermometers are used to ensure adequate hot holding of 60C is achieved throughout the day
