Comments

- Hand delivered Health Permit to operator. Ensure to post in plain public view.
- Hand sinks stocked with liquid soap and paper towels
- Bleach sanitizer measured 50ppm. Add more bleach so that it is at least 100ppm
- Walk in cooler was at 1C - 3C
- Prep line cooler was at 4C - 5C
- Hot holding for pizza @ 60C. Pizza kept in warmer 1 1/2 hrs - use timer to track time (if < 60C). *Start using temp log to record daily.
