Observation: A small number of droppings was found next to the grease trap and next to the ladder in the kitchen. The operator has traps in place and is sealing entry points that are found. A door sweep is in place at the back door.
Corrective Action(s): Clean all droppings with a bleach solution and monitor.

All coolers were < 4 C.
All freezers were < -18 C.
Hot holding was > 60 C.
Hand sinks were supplied with hot and cold water, soap and paper towels.
Bleach sanitizer solution at the front measured at 100 ppm.
The dishwasher reached 74 C at the plate level.
General sanitation was satisfactory.
