Observation: Black organic buildup noted in the interior of the ice dispenser.
Corrective Action(s): Discard all ice in the ice machine. Clean and sanitize as per the manufacturer's instruction.

Observation: 1. Food (e.g. sauces, raw fish, cooked food) noted in the reach-in coolers and walk-in cooler stored unprotected with no plastic wrap or lid.
2. Food (including raw fish, bags of lettuce and carrots) stored directly on the floor in the walk-in cooler.
Corrective Action(s): 1. Wrap or place a lid over all uncovered food that are in the reach-in coolers and walk-in cooler unit to protect them from potential contamination.
2. Store all food in the walk-in cooler at least 6 inches off the floor. Food in a food service establishment must be stored at least 6 inches off the floor to facilitate cleaning and to allow for the monitoring of pests.

304 - Premises not free of pests [s. 26(a)]
Observation: At least 4 ants were observed on the floor in between the kitchen handwash sink and dry storage rack for clean utensils.
As per operator, they use to have an external pest control company that would come in for pest issues. However, they were unaware of any pest issues and have since stopped the pest control company's regular inspection.
Corrective Action(s): Operator will attempt to address pest issue (2 weeks time given to contain issue). If operator cannot control the ant situation in his premises, then he is to contact the external pest control company to inform them of the ant issue noted in the kitchen. Work alongside the pest control company to address the pest issue.

Observation: 1. Dried on food soil noted on the underside of the handles in the 3 door reach-in cooler and walk-in cooler.
2. Black organic and dust buildup noted on the ceiling and by the fan unit in the walk-in cooler.
3. Buildup noted on the head of the dish sink sprayer.
4. Dried on food soil noted on the shield of the blade of the handheld blender.
Corrective Action(s): Clean and sanitize all of the aforementioned areas. If these items are not included in your regular sanitation schedule, please include these items and clean as often as required to avoid buildup.

Routine inspection conducted today:
Handwash station, including washrooms, were accessible, equipped with hot and cold running water, liquid soap and paper towel.
Chlorine sanitizer available. 100 ppm chlorine residual detected in solution. Note: Unit just opened at the start of inspection and chorine sanitizer was set-up during the inspection. Please ensure chlorine sanitizer is prepared and available whenever preparation begins in the kitchen.
High temperature dish machine was able to attain 72.8C at the plate level during the rinse cycle.
All refrigerator units were at ≤ 4C.
Chest freezer was at ≤ -18C.
Storage hierarchy in the cold hold units was satisfactory - raw fish stored below cooked food and produce.
Deep fryer and fume hood sanitation was satisfactory. Note: Fume hood is scheduled for cleaning on May 30, 2022. As per operator, professional fume hood cleaning is scheduled within the next 2 weeks.
Organization noted satisfactory at the time of inspection.

Note: Bare wood shelving noted from the previous routine inspection has now been painted or covered with a vinyl that is smooth and easily cleanable. However, some of the vinyl or paint has been chipped off and a small area on the shelving has exposed bare wood again. Please repaint or replace vinyl so that all areas in the kitchen is smooth and impervious to moisture to allow for effective cleaning and sanitation.
