303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)] Observation (CORRECTED DURING INSPECTION): Dishwasher measured 0 ppm using supplied test strips. Observed chlorine line empty and not primed. *Possible wonky feeder spring at supply-end of system. Primed system and rechecked with operators' strips. Again 0 ppm. Re-checked with my strips and measured 50 to 100 ppm. NOTE:** Rinse temperature checked with IR gun and measured 178 F. Double sanitizing? Corrective Action(s): Ensure chlorine feed is primed at beginning and midpoint of day to ensure unit is ready to sanitize and that it keeps sanitizing throughout day. Replace strips with new low concentration chlorine strips. Violation Score: 5

- Cooling units in line kitchen, serving line, cook line and bar all measuring less than 4 C. - Handwashing stations all stocked throughout kitchen. Good. - Glasswasher at 12.5 ppm iodine; See above for dishwasher details. chemical area better managed and no real signs of drain flies. Keep on the floor drains leading into coming insect season.
