304 - Premises not free of pests [s. 26(a)]
Observation: Although Deep cleaning ahs been done almost in every corner of the premises, there are still some mice dropping at the back room where some food stored. Mice activity noted under table for meat slicer and flour containers. Flour containers are pest proof containrs and noted in good condition. Sticky traps noted place throughout facility.
Corrective Action(s):
- Continue cleaning this area and ensure no mice dropping left on floor.
- Using bleach water spray floor and wall up to 10 inch so that mice trails are sprayed with bleach solution.
- Plug any holes and possible mice entry. Recommended steel wool to be used for small holes and cracks.
- Have regular pest check to monitor mice activity. If increased, take action.
- Increase number of cleaning times for affected areas.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Food containers to store food observed greasy, soiled and not washed properly. Also noted meat slicer has not been properly cleaned and sanitized.
Bleach water is available in spray bottles only at the time of this inspection.
Correction:
- Do not use unwashed equipment, tomato slicer, onion slicer, food containers until they are washed then sanitized using 100 ppm bleach water solution. Ensure to fill up sink with sanitizer, test it then soak containers for at least 3 minutes then store to air dry.
- Ensure meat slicer is thoroughly cleaned, then sanitized using bleach water sanitizer. Make sure no dried food soil left on this equipment.
Comments

Follow up inspection conducted.

- Extensive cleaning has been done and improvement noted. Food containers, slicers and general surfaces have been washed and sanitized. Dough mixer has been deeply cleaned.
- Dry storage now been cleaned and organized. Food section with cardboard boxes under SS table is to be organized and kept clean. Continue monitoring pest activity for this dry storage and if increased, more droppings, take action.

1- Cleaning kitchen back room.
2- reorganizing and cleaning dry storage.
3- Plug holes to prevent pest entry
