Food not cooled in an acceptable manner [s. 12(a)] (Large batches of chutney sauce and gulab jamun prepared and stored in large stainless steel pots in walk-in cooler. After discussing cooling procedure, it was found that these items are cooled at room temperature prior to storage in walk-in cooler. Improper cooling gives pathogenic bacteria an opportunity to grow to infectious doses and product toxins.)
