- Operator confirmed that repairs were done on the dishwasher. First run was 66C at plate level, and then the second run was 71.5C; good.
***Continue to monitor the final rinse cycle of the dishwasher to ensure it reaches 71.2C or above. Re-run dishwasher under temperature is achieved to adequately sanitize dishware.
- Staff demonstrated proper cooling practices for cooked foods.
