203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Vegetable chilli in a medium-sized stock pot was measured at an internal temperature of 7 degrees C, after cooling in the fridge overnight.
Corrective Action(s): Discarded. Ensure all potentially hazardous food cools from 60 C to 20 C within 2 hours maximum, and from 20 to 4 C within a further 4 hours maximum. Split food into smaller/shallower pans or trays to cool more rapidly, or use an ice bath (facility does not have an ice machine).

Observation: (1) Dishwasher does not appear to be adequately draining or filtering dirty water after wash cycles, or rinsing dishes clean after washing. Significant amounts of food particles and detergent still present on dishes after completion of cycles (unit is still providing adequate chlorine sanitizer in rinse water).
(2) Storage cupboard beside dishwasher is starting to deteriorate due to moisture damage, particularly on bottom surface under muffin trays.
Corrective Action(s): (1) Technician contacted for service during inspection. Ensure the unit is operating normally (and leaving dishes clean) by tomorrow (24th November 2016). Discussed temporary additional rinse and sanitize steps with head cook during inspection. Contact the health officer for reinspection after service.
(2) Repair or replace chipped lining with an impermeable, easily-cleanable liner material by next week (30th November 2016).

Observation (CORRECTED DURING INSPECTION): Label had worn off on bleach sanitizer spray bottle.
Corrective Action(s): Re-written on bottle during inspection. Place adhesive labels or similar on these bottles by next week (30th November 2016), as these should last longer than permanent marker on the bottle surface.
