Observation: Small black flies around dry storage area, on walls and door frame of storage room, on lights and covers.
Some flies visible in dry storage room. Majority of items are covered and protected.
Door to back garbage is closed during the inspection.
Cook says flies appear seasonally and this has been an on going issue.
Corrective Action(s): Call pest control for a inspection.
Create a pest control plan to remove and control flies
Find the source of breeding or infestation and remove the issue.
Advise to install a fly light in this area (not above food prep) to control flies.

Food not cooled in an acceptable manner [s. 12(a)]
Observation: Large side of thick roast beef stored covered under plastic wrap, in metal cooling tray, on bottom shelf of upright fridge.
Operator said that roast is pulled out during the day from the oven, cooled on the counter for some time. Whole roast is then covered and placed in fridge to cool overnight.
Operator said internal temperature was checked after cooking, 160F/71C.
No records for cooking or cooling processes.
Internal temperature of roast <4C.
Fridge temperature <4C.
Correction: Review proper cooling processes in your Food Safety Plan.
Record internal temperature of roast to track cooking and cooling processes.
Ensure roast is cooled as quickly as possible.
Cut roast into smaller portions after settling for about 30min; smaller portions stored in the fridge allow roast to cool quicker.
Current roast needs to go through recooking before serving.
