Observation: Large assembly cooler (left) observed with pooling liquid below it. Ambient temperature: 6 degrees C. Limited food storage (food inserts only); no storage in lower compartment. Ice kept below food inserts. Internal food temperature: 5 degrees C (inserts recently changed out). It was stated by staff that cooler technician was on site earlier today and will return in the evening.
Corrective Action(s): Ensure cooler is serviced to fix leak(s) and ensure cooler is capable of maintaining food at 4 degrees C or less in order to limit the growth of potential pathogens. Continue use of time control measures and limiting food quantities in cooler. Date to be corrected by: Today.

Observation (CORRECTED DURING INSPECTION): One chemical spray bottle with quats sanitizer label was observed with purple liquid (degreaser, per staff). Note: Sanitizer on site is pink. Spray bottles not used for santiizer; buckets with wiping cloths only.
Corrective Action(s): Chemical spray bottle was relabeled as degreaser. Ensure all cleaning/sanitizing chemicals are properly labeled to identify their contents. Mislabeled chemicals may potentially result in chemical contamination of food and/or food contact surfaces.

- Freezer at -18 degrees C.
- Food is covered and labeled.
- Hand sinks unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Proper hand washing and glove use practices observed.
- High temperature dishwasher measured 71 degrees C at the utensil surface (minimum 71 degrees C).
- Hot and cold running water available at three compartment sink with built in drain plugs.
- Quaternary ammonium compounds (quats) sanitizer tested at 200 ppm quats in buckets with wiping cloths, in third sink compartment, and from dispenser.
- Equipment and utensils in sanitary condition.
- No signs of pest activity observed at time of inspection.
- Temperature and sanitation logs maintained.
- Permit posted.
