Observation (CORRECTED DURING INSPECTION): Knives in the knife block and magnet were observed to have dried food debris.

Observation (CORRECTED DURING INSPECTION): The following regarding the bleach surface sanitizers were noted:
1) Missing surface sanitizer observed in the kitchen area
2) Test strip was bleached out when testing surface sanitizer
- Provided education that sanitizer required for proper cleaning and sanitization of food contact surfaces and that half a teaspoon of bleach in 1L of water required to prepare 100ppm of bleach

Observation (CORRECTED DURING INSPECTION): Chipped porcelin ramekins observed for scooping broth powder which can introduce physical hazards in the food
- Owner discarded this bowls and replaced with stainless steel ladles for scooping

Comments

General observations:
- Handsinks equipped with hot and cold running water, liquid soap, and paper towel
- Low temperature dishwasher with final rinse chlorine concentration of 100ppm at the plate
- Two compartment sink for manual warewashing available
- Hot holding unit for the soap measured to be at 70C
- All coolers (front beverage cooler, three standing kitchen coolers, prep/ sandwich cooler) measured to be 4C or lower
- All freezers (chest and two standing freezers) measured to be at -18C or lower
- No pest activity observed.
- Ice machine not in use during time of inspection and observed to be in sanitary condition
- Staff presented valid and current FOODSAFE Level I certificate (valid until 2025)
- Washrooms observed to be in sanitary condition
- Permit posted in a visible location

Note:
1) Remove the wooden block from the premises as not used and unsealed. Unsealed wood is porous and not smooth which makes cleaning difficult to clean and sanitize.
2) Ensure that food is stored in the inserts rather than in bowls on top of inserts for proper cooling
