Observation (CORRECTED DURING INSPECTION): 1.) Initial observation: Ice cream scoops were stored in a container with water in the handsink station near the ice ccream chest freezer.
2.) Then scoops were stored in a container with running warm water from the handsink, which had fully submerge the scoops, including the handles.

CORRECTIVE ACTIONS
- Wash and sanitize the icecream scoops.
- Until the dipper well is repaired (refer to violation 308), store sanitized ice creams in a container with ice-water. Ensure to monitor the ice-water bath temperature and change when temperature rises above 4 degrees C.
* - Do not store ice-water bath container in the handsink.

Observation (CORRECTED DURING INSPECTION): Wiping cloths on the food prep area neat the prep cooker were not stored in the sanitizer bucket and had no detectable QUAT residue (0 ppm).

CORRECTIVE ACTION
Store wiping cloths and soak it into the QUAT sanitizer bucket at all times to ensure proper sanitization of food contact surfaces.

Observation: Minimal rodent droppings were observed in the dry storage area with canned goods.

Clean and sanitize droppings and the noted area above. ensure to store all items above the ground (at least 6 inches) to aid in cleaning and pest monitoring. Monitor for rodent droppings by visual inspection of the premises.

Observation: Dipper well was not in use at the time of the inspection. Operator stated that there is a leaking issue.

Observation (CORRECTED DURING INSPECTION): QUAT sanitizer and degreaser spray bottles were mislabelled. QUATS were stored in the degreaser spray bottle and degreaser solution was stored in the QUATS spray bottle.

CORRECTIVE ACTION
Properly label spray bottles to prevent contamination of foood contact surfaces with non-food grade chemicals.

GENERAL COMMENTS

> All handsink stations were adequately equipped with running hot and cold water, paper towels, and liquid hand soap.
> Sanitizer spray bottles were available and labels were changed properly. 200 ppm QUATS were detected using test strips.
--> NOTE: Ensure to inform all staff about the proper refilling of the spray bottles with the right chemical.
> Dishwasher (low-temperature) has 50 ppm chlorine residue at the plate surface.
> General sanitation was satisfactory
> Meat slicer was in good sanitary condition
> Ice machine was in good sanitary condition --> hire a professional to do a deep clean
> cooler measured during the inspection:
- Prep cooler measured 2 degrees C
- Beverage cooler measured 3 degrees C
- 2 door glass cooler measured 3 degrees C
- 2 door steel cooler measured 4 degrees C
- Walk-in-cooler measured 4 degrees C
> Freezers measured during the inspection
- Ice cream chest freezer measured -18 degrees C
- Chest freezer with vegetables measured - 20 degrees C
- Walk-in-freezer measured - 20 degrees C
> Hot holding with soups measured above 60 C degrees C (60 - 66 degrees C)
> 2 - compartment sink was available and in use. QUATs measured 200 ppm. 2- functional sink plugs were available.
> QUAT dispenser measured 200 ppm.
> Temperature log sheets were available and in use.
