Observation (CORRECTED DURING INSPECTION): Staff wore disposable gloves to bread the chicken. They removed the gloves, washed their hands and completed another task. Staff put the dirty disposble gloves back on to bread more chicken. Disposalble gloves shall only be used once and then thrown away.
Corrective Action(s): When disposable are taken off, they must be thrown away and a new pair put on after washing hands. During the inspection, staff threw away the gloves.

Comments

A routine inspection was completed, the following observations were made:
- Coolers 4C or colder; freezers -14C or colder; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottle had [Cl2] of 200ppm.
- All foods stored in food grade containers; covered; labeled; date coded; foods stored in groups with raw chicken separate from other foods; and food stored 6" off the floor.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is good. Exhaust canopy is scheduled to be professionally cleaned this month. Staff clean canopy every week and filters washed every month.
- No signs of pests.
- FoodSafe certified staff present.
- 3-comp sink used for washing and sanitizing. Bleach present for sanitizing.
- Owner explained that, as of Sept. 1/22, each location no longer received chicken from head office. Each location was instructed to find their own chicken supplier and inform head office which company they chose. Each location will receive their chicken, marinate it and then portion it out on-site.
- Pickled radish is being made at each location.
