Observation (CORRECTED DURING INSPECTION): Missing paper towel in the staff washroom.
Corrective Action(s): **Issue corrected at the time of inspection** A roll of paper towel was placed by the staff washroom handwash station during the inspection. Operator must always ensure that all handwash stations, especially the washroom, is fully stocked with paper towel and liquid soap to allow for proper handwashing when required.

Observation (CORRECTED DURING INSPECTION): Over 200 PPM chlorine residual detected in the sanitizer container set-up in the kitchen.
Corrective Action(s): **Issue corrected at the time of inspection** Operator diluted the sanitizer container. After the dilution, 200 PPM chlorine residual was detected.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: 2 mop buckets filled with dirty water were noted in the back storage area.
Corrective Action(s): Mop buckets must be discarded immediately after mopping to avoid any pooling water from attracting pests. This should become a regular practice as the temperature gets warmer, this will become a pest attractant.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Dish machine was noted leaking when in operation. A bucket is placed below the machine to catch any leaking water.
Corrective Action(s): Operator is aware of this issue and has ordered a new part in to fix the broken piece that is causing the leak.

309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
Observation: Chemicals were noted stored on the shelf above cleaned pans in the dishwashing area.
Corrective Action(s): Reorganize this area so that chemicals are stored below any food contact items in the event of spillage/ leakage that could pool on these equipment that may lead to a chemical hazard if not washed properly if this was to happen.

Observation: Facility has removed a oven by the handwash station in the kitchen area and added a new cooler in the server area without receiving Fraser Health's approval.
Corrective Action(s): Submit an updated floor plan that depicts the actual layout of the facility. Whenever equipment is removed/ added or changed in location, an updated floor plan must be submitted to Fraser Health for review and approval must be granted prior to making the change. This is important because if the change does not meet health regulation or requirement then it may become quite costly to undo the change after the fact.

Routine inspection conducted today:
Handwash station, except for the staff washroom, was accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4C or below.
All freezer units were at -18C or below.
General storage hierarchy acceptable and in general food was stored protected (just a couple of items in the walk-in cooler needs to be stored covered/ protected).
Proper scoops, with handles, were used for dispensing bulk food items.
High temperature dish machine was noted at 71.0C at the plate level during the rinse cycle.
General cleanliness acceptable.
No signs of pest activities noted during the inspection.

Note: Operator wants to remove a sink noted in the server area. Please submit an updated floor plan with the proposed removal of sink and this will be reviewed with the information in your existing file for review.
