- Manual warewashing practices observed. 200 ppm Quats sanitizer used to sanitize food equipment. Quats test strips available to verify sanitizer concentration.
- Pan Washer: >77 deg C at plate surface (3-temp thermolabel)
- General sanitation of premises appears satisfactory.

Note: Regular pest control services provided by Orkin. Pest control service report dated October 11, 2017 noted rodent activity in bakery area. Continue to monitor pest activity.
