Observation (CORRECTED DURING INSPECTION): Main kitchen walking cooler was observed at the ambient temperature of 12.5C. Food contents were at milk at 6C and cheese at 8C. Products tested at the time of inspection 9 am. Technician indicated the unit broke this morning at 8 am. Temperature logs indicate temperature of unit was at 43F at around 8 am and the unit was working the night before.
Corrective Action(s): Perishable foods are required to be stored at 4C or below. All perishable foods moved to working basement cooler. Any foods required to be used for food immediate food service can be stored for less than 2 hours in kitchen while being cold held in ice. Repair this unit unit today.

Premise is sanitary. No signs of pests at the time of inspection.
Hot and cold water available.
Hand washing sinks in use with paper towels, liquid soap and warm running water.
Dish washer final rinse cycle at 71.4C at the plate as per min/max thermometer.
Conveyer belt dishwasher in use with 3 compartment sink.
300 ppm quat sanitizer in use at the sink, spray bottles and in sanitizer buckets.
Test strips for sanitizer in use.
Microwaves are sanitary.
Ice machine is sanitary with dedicated scoop.
Utensils and equipment are kept sanitary
Walk in cooler main kitchen at 12.5C ambient - broken at the time of inspection.
Basement walk in cooler dairy products 3.9C.
Basement walk in freezer frozen slabs of meat -19C.
Small white chest freezer carrots at -21C.

Chemicals and laundry is kept in separate dedicated room and is adequate.

Note: the recommendation for additional refrigeration unit is not on site yet. The extra refrigeration unit on the main floor as a back up would have provided more options in an incident if there is no refrigeration in the main kitchen as in this inspection. This will be further discussed with facilities manager to have an extra unit on site by end of July.
