- Hot/cold water, liquid soap, and paper towel available **Operator must add paper towel dispenser in kitchen area for hand washing**
- 100ppm chlorine bleach sanitizer available for food contact surfaces
- High temperature dishwasher reached 71C at plate surface
- Operator removed walk in cooler and replaced it with three glass display coolers
- All coolers, including glass display, preparation, and sushi bar coolers were 4C or lower
- All freezers, including upright, chest, and under-counter freezers were -18C or lower
- Hot holding for rice and miso soup were 60C or above; rice scoop kept in sanitary manner
- Ice machine in good condition; ice scoop kept in sanitary manner
- Operator is maintaining temperature logs
- No evidence of pest activity during inspection
- General sanitation and cleanliness was adequate
- Facility was recently renovated; new bright coloured paint, new easy to clean and impervious flooring, and reorganizing equipment in the kitchen area
