A routine inspection was completed:
- Coolers 4C or colder; freezers -20C or colder; hot holding units above 60C; thermometers present; and temps recorded 2x daily.
- High temperature, multi-tank conveyor dishwasher had rinse cycle temp above 71C (minimum required is 66C) at the plate's surface, as per thermolabel.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottles and cloth buckets had strength of 200ppm. Test strips present and solution changed every 2 hours.
- Utensils are stored in ice water baths and the solution is changed every 2 hours, or sooner if water becomes dirty.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate from RTE foods; and foods stored 6" off the floor on racks, shelves, and pallets.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good.
- Exhaust canopy and filters are clean. Service sticker indicates they were professionally cleaned and serviced in February 2024. Staff remove the filters at least 2x a week to remove grease and dust.
- No signs of pests. Floor drains were treated with special foam, by pest company in December 2023.
- Valid FoodSafe Level 1 certified (or equivalent course) staff present.
- Interior surfaces of the ice bin is clean and absent of mold.
- Plastic lid on the "salt" bin has been replaced with a new one that is not damaged.
- The 3-deck oven door and gasket has been repaired, and it closes tightly and securely.
ACTION
Peel off the protective plastic on the upright cooler, beside the 3-deck oven, as the plastic is not cleanable and is only to protect the surface from getting damaged during transport. |
