Observation (CORRECTED DURING INSPECTION): Walk-in cooler was at an ambient temperature of 11C. No temperature logs were provided, and the internal temperatures of the items inside were as follows:
- 2 Pails of Yogourt: 7C
- Two trays of samosas: 12C
- Two boxes of eggs (each box containing approximately 60 eggs): 11C
- 2L jug of milk: 10C
- 6 (454g) packages of butter: 10C
- Raw chicken: 10C
- Raw meat kebabs (chicken): 10C-12C
- 3 Metal trays containing raw, marinated meats: 12C
- Two buckets of gulab jamun: 8C
- Butter chicken and beef nihari inside pre-packaged containers: 10C
- Cooked rice inside of a metal pot: 20.5C
Corrective Action(s): Aforementioned items discarded at time of inspection. All potentially hazardous foods must be kept at 4C or less (40F or less) to prevent the growth of disease-causing bacteria.

Observation (CORRECTED DURING INSPECTION): 1. REPEAT VIOLATION. Low-temperature dishwasher does not release any chlorine residual (0 ppm).
2. Dough mixer in poor sanitary condition.
Corrective Action(s): 1. Dishwasher was adjusted and reached 50 ppm chlorine residual at the plate level. Existing plates were all run through the dishwasher to be re-sanitized.
2. Dough mixer bowl was cleaned and sanitized at time of inspection. It is expected that the dough mixer should be washed, rinsed, sanitized, and air-dried after each use.

Observation (CORRECTED DURING INSPECTION): 1. Ventilation canopy above stove has accumulated oily grease.
2. Shelving underneath stainless steel prep table contains debris and old droppings.
3. Floor, walls, and cooling racks need to be thoroughly cleaned as there is currently accumulating grime.
Corrective Action(s): 1. Ventilation slats were cleaned at time of inspection.
2. Shelving underneath stainless steel prep table was cleaned, including the floors, walls, and cooling racks of the walk-in cooler.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation (CORRECTED DURING INSPECTION): 1. Walk-in cooler at ambient temperature of 11C.
2. Low-temperature dishwasher does not dispense any chlorine residual at final rinse cycle (at the plate).
Corrective Action(s): 1. Technician called at time of inspection. Walk-in cooler was adjusted (debris removed from condenser unit) and maintained a temperature of approximately 36F (2-3C).
2. Dishwasher adjusted so that 100 ppm chlorine residual is dispensed at the plate at the final rinse cycle.

It is essential that the walk-in cooler and dishwasher be checked DAILY to ensure that it is working properly. Further issues will result in additional progressive enforcement, including issuance of a violation ticket.

Observation (CORRECTED DURING INSPECTION): Kitchen staff member did not have FoodSafe 1.
Corrective Action(s): Manager arrived to oversee kitchen. At least one person must have FoodSafe 1 in the absence of the operator.

Follow-up inspection to report #JMAA-BBBVY7. Due to repeat issues with the malfunctioning dishwasher, further progressive enforcement, including issuance of a violation ticket, may apply.

Level of rodent activity has decreased, some droppings observed around the mop sink area were removed at time of inspection. Holes around the mop sink room were patched up with cement
A further follow-up inspection will be conducted to assess sanitary condition of facility, as well as temperature control and dishwashing
