Observation: 1. Malfunctioning Dishwasher. Operator has contacted technician and is awaiting assessment. Will likely involve replacement of parts. Inform inspector as soon as any news or estimate time of correction is provided. Note that if repairs are not complete in a timely manner, further enforcement actions may result.

2. Sandwhich prep station measuring 6.1°C at time of inspection; staff was stocking unit at start of inspection

Corrective Action(s): 1. temporarily switch to manual 2 compartment sink hand washing method
1 compartment for wash/rinse, 1 compartment to sanitize (100-200ppm bleach solution, 1 min soak)
bleach mixed by combining 1/2 tsp bleach / 1 L water.

2. obtain thermometer and monitor unit to ensure it can maintain temperatures of 4°C or less
develop and maintain temperature logs for all cooler/freezer units
as previous inspection, if unit cannot maintain appropriate temperatures, (4°C or less), contact refrigeration technician to have unit serviced.
until unit can maintain temperatures of 4°C or less, potentially hazardous foods are not to be kept in unit for more than 2 hours.
