A routine inspection was conducted, the following observations was made:
- Coolers 2C or colder; freezer was -21C; thermometers present; temperatures recorded daily; and monitored & alarmed with a private company.
- Hand sink is dough processing room had liquid soap, paper towels, and running hot and cold water.
- Low temperature dishwasher rinse cycle had [Cl2] was 50ppm. Strength is tested and recorded every 30 minutes.
- Quats sanitizer in 3-comp sink was 200ppm.
- All foods stored in food grade containers; covered; date coded; and stored 6" off the floor on pallets, racks or shelves.
- General sanitation level is good. Warehouse swept daily; sweeping and moving of pallets done weekly; and deep clean (floors, racks, etc.) done yearly by contracted company. Dough production room is clean. Washing area is clean and no pooling water.
- No signs of pests. Weekly monitoring visits by Rentokil completed. All recommendations made by the pest technicians are being followed.
- No expired foods found. FIFO rules being followed.
- All in order.
