*Temperature checks:

- Hot holding at 60 C or above

* Cleaning & Maintenance:
- 3 compartment sink with Quats sanitizer at 200 ppm
- approved sanitizer in the red buckets to sanitize food contact surfaces at 200 ppm
- Dedicated mop sink
- Dry storage well organized
