Observation (CORRECTED DURING INSPECTION): Quats spray bottle had >>400ppm Quats. Chef had diluted the solution down to 200ppm at this time.
Corrective Action(s): Ensure to have correct concentration of Quats sanitizer available for use at all times. 20ml of sanitizer is required for 1L of water, according to the manufacturer's instruction. Confirm the concentration with test strips. As discussed at this time, this particular sanitizer requires contact time of 10minutes.

Observation: Bowls were observed in sugar/flour bins placed under the main kitchen prep table. Opened bag of chana flour observed in back storage room.
Corrective Action(s): Ensure to use proper scoops for bulk items. Do not store scoops inside these bags/bins in a manner that the handles come in contact with food. Ensure to close the flour bag after each use to protect food from contamination at all times.

Routine inspection conducted:

-Handwash stations adequately supplied.
-Coolers operating at or below required temperature of 4'C; Freezers operating at or below required temperature of -18'C.
-Hot-holding unit operating above 60'C. Thermometers available for temperature monitoring.
-High temperature dishwasher achieved 71.9'C at the plate level after final rinse.
-Storage rooms (Dry/Chemical) satisfactory.
-3 compartment sink satisfactory. Bleach available for general cleaning.
-Ventilation canopy hood overdue for professional cleaning (May 2019)- called for service. OK.
-Professional pest control company contracted. APC- Recent report checked at this time.
-Traps in place. No evidence of rodent activity at this time.
-Washroom handsinks satisfactory.

NOTE: Ants (8-9) observed on floor by the back entrance, where sugar bags were stored. Remove all sugar from floor and monitor.
NOTE: Knobs for the back prep sink and dishwashing sink require repair. Hot/cold running water accessible at both stations at this time.
NOTE: Upstairs is used for storage (take out boxes) only.

Facility maintained in sanitary condition, but could be improved by cleaning hard to reach areas on a more regular basis. Remove recycles from the front area.
