Observation (CORRECTED DURING INSPECTION): Cooked beef, spiced rice and bean paste were measured at 51-53C internally. Hot holding unit water basin temperature measured around 55C. These items were prepared less than 2 hours ago. The operator reheated these items >74C at this time and increased the temperature setting on the hot holding unit. The operator is to discard these reheated foods after 2 hours. Any left over after 3:30 PM today to be discarded.

Routine inspection conducted:
Hand washing stations are fully equipped with hot and cold running water, liquid soap and paper towels (see violation 401 for additional information).
All coolers measured at 4C or less.
Freezers at adequate temperature.
Hot holding items on the grill was measured >60C.
Low temperature dishwasher's sanitizing cycle measured at 100 ppm chlorine at the plate level.
Ice machine in sanitary condition.
Food contact surface sanitizer was measured at 200 ppm QUATs as per test strips.
General food storage practice is adequate.

Unannounced follow up inspection to be conducted within a month.
