Observation (CORRECTED DURING INSPECTION): Pork in 2 door cooler had visible mold on it.
Corrective Action(s): Operator discarded product once advised of the mold. Date products in storage so that you know how long they are stored and safe to eat.

Observation (CORRECTED DURING INSPECTION): Potentially hazardous foods in the 2 door cooler were >4C. Internal temperature of products were: tofu 12.9C pork: 10.2C
Corrective Action(s): Potentially hazardous foods stored above 4C were discarded by the Operator as he was unaware how long the temperature had been elevated.

Observation: Sink in front server area is not functional as pipe is leaking.

Observation: Numerous items stored in the 2 door cooler were double stacked or not covered. This was noted as an issue on the previous report.
Corrective Action(s): Ensure items stored in the cooler are covered with food grade wrap or well fitting lids to prevent contamination.

Observation: Clutter and excess cardboard boxes were noted throughout the restaurant. This can create harbourage areas for pests

Observation: Food debris and grease noted in the kitchen. An accumulation of containers, packaging, and paper products which are not intended to be reused are present throughout the restaurant.
Corrective Action(s): Thoroughly clean areas where there is grease accumulation and clean walls where there is food splatter present.

Observation: Cardboard boxes are being re-used to store products in coolers. Packaging intended for single use is bieng re-used to store foods (ie. tofu packaging being used to store noodles). Empty tins are being used to store foods.
Corrective Action(s): Remove all cardboard boxes unless this is the original packaging the product has arrived in. Cardboard absorbs moisture and can attract pests. Discontinue using packaging that is intended for a single use. Remove all of this packaging that has been saved from the food premises. Use containers that are capable of being washed and sanitized.

Observation: 2 door cooler was not capable of maintaining foods at 4C or colder. Temp of foods ranged from 10-12C
