Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher did not dispense sanitizer on the first run. After maintenance, the dishwasher was able to dispense adequate chlorine sanitizer

Observation (CORRECTED DURING INSPECTION): Raw fish was being thawed at room temperature. Staff immediately placed the packaged fish under running water

Observation: The following areas require attention:
1) behind cook line in the kitchen due to build-up of debris and grease
2) in the dry storage room due to build-up of dust and debris
Corrective Action(s): Clean and sanitize those areas. Ensure all areas are cleaned more frequently to avoid build-up

Comments

Routine inspection conducted alongside Operator.

-all hand wash station were equipped with liquid soap, paper towels, and hot/cold running water
-Walk-in cooler and prep cooler were measured at 4C
-All freezer units were at or below -18C
-No hot holding was observed during the inspection
-Ice Machines were observed to be clean
-No signs of pest activity. Pest traps are placed throughout facility
-Permit was displayed
-Staff with FOODSAFE Level 1 was onsite
