Observation (CORRECTED DURING INSPECTION): Some food items, including fish and chicken, were left uncovered at time of inspection.
Corrective Action(s): Fish and chicken were covered during the inspectino. Ensure that food items inside the walk-in cooler are covered at all times to prevent contamination.

304 - Premises not free of pests [s. 26(a)]
Observation: Flies observed on floor area hovering around the floor drain.
Corrective Action(s): Clear out the drain (as specified in code 305). Monitor for fly activity and contact your professional pest control company for further assistance (e.g. installation of UV fly traps).

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: Drain that is on the same sanitary sewage line as the grease interceptor has clogged. There is no sewage backflow in the facility at time of inspection. However, a sewage stench was present near the drain leading to attraction of flies.
Corrective Action(s): Maintenance personnel has been called in to clear out the drain on Monday, September 3.

Comments

Routine inspection conducted. The following observations were made:

1. Temperatures - all temperatures meet health requirements
- Walk-in cooler at 2C
- Display coolers at 4C or below
- Walk-in freezer at -18C
- Stand-up freezer at -18C
- Beverage cooler at 4C
- Coolers and freezers are equipped with accurate thermometers

2. Hygiene and Sanitizing
- Handwash station in front-of-house, back-of-house, and in washroom area adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Bleach sanitizer available at 200 ppm
- 3-compartment sink in use at time of inspection, 50-100 ppm bleach solution in sanitizing compartment
- Meat grinder maintained in sanitary condition up front, as well as other utensils and containers in the back kitchen
- Employee asked to demonstrate proper cleaning and sanitizing of the meat bandsaw

3. Storage
- All food items elevated off the floor
- Storage of items appropriate - fish is at the top and chicken is at the bottom

4. Administrative
- Permit posted and up-to-date
- Operator has FoodSafe 1 (recently re-taken on Aug 25, 2018)

5. Suppliers
- Invoices provided for frozen and refrigerated meats on premise. 4 suppliers: Fraser Foods Ltd. (for chicken, salmon), Newton's Hi-Quality Meats (for lamb), Wescadia (lamb shoulder); Captain Foods Ltd. (for chicken legs), World Foods Distribution Ltd. (for yogurt). All meat arrives frozen, some is defrosted in the walk-in cooler for use. Excellent

A follow-up inspection will be conducted on September 4, 2018 to verify that the drain has been cleared.
