Observation: Cleaning is required in the back kitchen:
> Food debris noted under the 2 door freezer and in between the freezer and cooler.
> Leftover breading noted around the breading table.
> Strip of syrup/pop residue left on the floor under the pop bag shelf.
Corrective Action(s): Clean and sanitize above mentioned areas as per your sanitation plan. Leftover breading should be cleaned up when there is an adequate moment of downtime.

Observation: 1) Mini fridge in back kitchen has ambient temperature of 10C.

2) Prep cooler at server station has ambient temperature of 6.4C. Even after adjustments, temperature did not change.
Corrective Action(s): 1) Readjust the mini cooler so that it can maintain 4C or colder, or do not use. A container of buffalo sauce that requires refrigeration was stored inside this cooler and has been moved to working one.

2) Service this cooler immediately so that it can maintain 4C or colder. Move all stored items into another working cooler.
