Observation (CORRECTED DURING INSPECTION): Temperature of the rice in the rice cooker was not hot enough (129-134F/ 54- 57C recorded).
Corrective Action(s): Rice discarded. Ensure that staff is using the appropriate rice cooker for the batch size. Staff should check the temperature daily.

Observation (CORRECTED DURING INSPECTION): Concentration of the quats sanitizer appears to be too high.

Clean the wall behind the cutting board.
The food probe thermometer is reading 13F too cool. Calibrate the thermometer.
Stacked stainless steel bowls were wet. Ensure that the washed bowls are allowed to dry before stacking and using.

Temperature of the refrigeration, dishwasher, soup kettle were satisfactory.
General condition of the kitchen was good. No obvious signs of pest noted.
Cold storage units are monitored by an alarm.
