301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: 1) Dirty knives were being stored in the knife rack. It's apparent that knives are not being properly washed and sanitized after use.

2) Coffee grinder in the bulk dispensing area had coffee grinds all over it.
Corrective Action(s): 1) Ensure that the knives are washed after use and only clean knives are stored in the knife rack.

2) Clean the coffee grinder more frequently.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: There is minimal water pressure at the handsink in the Fruit/produce cutting room. The paper towel dispenser was empty. Access to the handsink was blocked because of items being stored directly in front of it.
Corrective Action(s): Refill paper towel dispenser and fix water pressure at this handsink. Do not block access to the sink.

Comments

-The larger cooler/freezer systems in the store is on the Microtherm system, where temperatures are monitored by an automated system. An alarm goes off if the temperature goes outside of the required range and management is made aware of it so that they can take action as required.
-Cooler temperatures were 4 degC or below
-Freezer temperatures were -18 degC or below
-Chili con carne was at 62 degC; Tomato basil bisque was at 72 degC; Chicken noodle quinoa was at 62 degC; Roast chicken was probed at 60 degC
-Raw meats are now stored on the opposite side of the walk-in cooler from the customers' orders.
