Observation (CORRECTED DURING INSPECTION): Time tracking stickers are not adequately maintained. Shell eggs were left sitting on counter long after their sticker had expired; approximately 5 hours. Eggs were warm to touch; staff discarded before internal temperature Approximately 1 dozen eggs discarded.
Time tracking stickers for the sandwich-making station were all expired; some were over 4 hours past expiry.
This is a serious violation; if you use time controls for food safety you must strictly monitor the time.

Observation (CORRECTED DURING INSPECTION): Metal cup with dirty water and spoon for stirring customer tea are sitting at room temperature; no ice. If water is used for storing utensils use must maintain it either cold enough or hot enough to prevent bacterial growth.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Front handwashing sink was completely blocked by staff filling and/or rinsing coffee pots. This is the only handsink near the front counter and drive-thru window where 80-90% of the food handling staff are working. This is a serious violation; ensure that all staff are aware of the following:
1) The hand washing sink is for hand washing ONLY.
2) Staff are required to wash hands frequently
3) Staff must know where coffee pots and all other dishes are to be rinsed and/or filled so they are not tempted to use the hand sink for such purposes.

These rules must be strictly enforced by management.

Observation: Several house flies (filth flies) noted buzzing around near the floor behind the front counter. They are attracted to some food debris under the counter; see also # 306.

Observation: Overall premise is pretty clean however there is a large accumulation of food debris under the counter near the milk shake machine; behind the front service counter. This accumulation will be hard to remove and will require scraping and scrubbing. There are several filth flies swarming around this area which reinforces the need for cleaning this area.

Overall premise is quite clean and well organized.
Sanitizer for cloths was 100 ppm chlorine
All fridges were < 4 Celsius.
No sign of rodents.
Hot holding was > 60 Celsius.
