Observation (CORRECTED DURING INSPECTION): 1) 3rd compartment sink quat sanitizer measured 100 ppm.
2) One sanitizer bottle concentration measured 100ppm.
3) Wiping cloths stored on the table. These need to be stored in sanitizer solution to prevent microbial growth.
Corrective Action(s): 1) Refill 3rd compartment sink with 200ppm quat sanitizer and check frequently to ensure concentration maintains at 200ppm.
2) Refill all sanitizer bottles to maintain 200ppm quat sanitizer.
3) Store wipin cloths in 200 ppm sanitizer solution. Ensure these buckets maintain 200ppm quat sanitizer.

Observation: Scoops for ice and dry flour were found to have their handles in contact with the food product. Dry flour scoops were bowls and had no handles. These are not accepted practices.
Corrective Action(s): 1) Obtain scoops with proper handles to avoid contamination with food product when scooping
2) Ensure ice scoop handles do not come into contact with the ice - corrected during inspection

Observation: 1) Minor spill in the keg cooler underneath the shelves in the back corner
2) Water spill on the floor by the ice machine. This will become a breeding ground for pests.

2) Ensure the floors are maintained to be dry as possible to prevent fly breeding

-Utensils are stored in ice. Reminder to check and change the ice frequently enough so excessive water does not pool in the utensil container
-Glasswasher maintaining 12.5ppm iodine
-Temperature logs are available for review
-Test strips are on site to test for sanitizer concentration
-Cooling procedures reviewed with operator. Operator cools with ice water bath, ice wands, portions foods into shallow containers, and does not cover with a tight lid.
