Observation: Walk in cooler - air temperature about 7C and food temperature 6-7 C (44F). There are some higher risk PHFs stored in walk in cooler (ie dairy, etc.).
Correction: Check walk in cooler again with accurate thermometer and adjust or service if needed to make sure that all higher risk food is stored at 4C or colder. Check temperature of food (sauces) in upper inserts of prep cooler as part of your temperature checks.

Observation: Walk in air and food temperatures are still above 4C (5.4C / 43.7F measured). Meat is not stored in this cooler.
Correction: Dairy and other potentially hazardous foods in this cooler are to be stored so food temperature will be at 4C/ 40F or colder (store in prep cooler). Verify temperatures with accurate thermometer. Service or adjust/repair the walk in cooler.

Follow up inspection.
Walk in cooler was adjusted/serviced previously. Today air temperature is at 3C - good.
Check accuracy of one thermometer in walk in. New thermometer appears to be accurate.
New menu items - ingredients/food from approved sources (keep receipts).

Submit updated food safety plans to Fraser Health.
