Make sure to turn up the hot holding unit on top such that it keeps food at 60 C. Bottom level measured at almost 80 C. Cooling units less than 4C. Freezers ok. Below -18 C. Handwash stations ok. Minimal food offered ready to eat. Call me if you plan to expand food services in any significant manner.
