* Temperature in the bottom shelves of the up right cooler ranged from 8-9 degrees C. Recommended that air flow not be blocked
in the cooler to allow for cool air to circulate.
* Fish should be stored above any raw meats or poultry items in the walk-in cooler.

Walk-in freezer < -18 C.
Under-counter refrigerators < 4 C.
Preparation coolers < 4 C.
Hot holding of soup> 60 C.
Quats sanitizer at the dispenser tested 200 ppm.
Dishwasher final rinse: 100 ppm chlorine at the plate surface.

Ice machine found be very clean.
