Comments

A routine inspection was completed:
- Coolers 4C of colder; freezers -19C or colder; hot holding units above 60C; thermometers present and temps recorded daily.
- Low temp dishwasher had a [Cl2] between 50-100ppm. Test strips present.
- Glasswasher had [I2] of 12.5ppm. No test strips present.
- Quats sanitizer in spray bottles and cloth buckets had strength of 200ppm. Ensure the sanitizer in cloth buckets is changed every 2 hours with new solution.
- Foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate or below RTE foods; and foods stored 6" off the floor on racks or shelves.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good.
- Exhaust canopy and filters are clean. They were professionally cleaned in August 2023 and next service due in February 2024, as per service sticker.
- No signs of pests. Glue traps and tin cans present for monitoring purposes. A professional pest company is contracted to monitor for pests.
- Valid, FoodSafe certified staff present.
- All in order.

ACTION
- Purchase more Iodine test strips so staff are able to ensure the glasswasher has the correct [I2] to sanitize glasses.
- Ensure the bottom shelf/floor (in the prep station area) where dry storage bins are found, is swept or cleaned more often. Remind staff to move all storage bins off the shelf/floor before cleaning.
- Block all openings with metal plates, wire mesh (1/4" of smaller), and/or tightly stuff with steel wool to exclude pests.
- Cut/remove vegetation away from the exterior of the building (6-12") so it doesn't create an environment where pests will live and feel safe to travel.
