Observation (CORRECTED DURING INSPECTION): Noted a chlorine sanitizer bottle with >200 ppm concentration as per test strips. The bottle was diluted down to ~100 ppm at this time.

Observation: Observed a pool of water under the prep sink. Operator mopped the area at this time. Observed rice grain spills under the rice storage area adjacent to the prep sink.
Corrective Action(s): Clean up the area noted in the observation section. Correct this by: immediately.

Observation: Back kitchen's middle stainless steel work station's bottom shelf was covered with aluminum foil which appears damaged and old.
Corrective Action(s): Remove aluminum foil. All surfaces must be smooth, non-absorbent and easily cleanable. Correct this by: Jan 19, 2022.

Comments

Routine inspection conducted:
Hand washing stations were fully equipped with hot and cold running water, liquid soap and paper towels.
Coolers measured at 4C or less.
Freezers measured at -18C or less.
Hot holding (e.g., rice) measured at 60C or higher.
Chlorine sanitizer measured at 100 ppm as per test strips.
General food storage practice is acceptable.
Low temperature dishwasher's sanitizing cycle measured at 100 ppm at the plate level. Chlorine test paper available on site.
Observed a bucket of water which was being used as an extension of griddle's grease tray. Burnt and scrapped foods (e.g., sauce) were being dumped in it. Ensure this bucket is emptied out hourly at minimum to discourage attracting pest.
Routine pest control in place. No sign of recent pest activity was noted at this time.
Kitchen vent cleaning due December 29, 2021. Operator is to connect with the mall to have their kitchen vent cleaned.

Signature was not collected due to COVID 19.
