401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Staff was washing vegetables in the hand washing station and stored directly in the sink. Hand washing stations are designated for hand washing only. Also, sinks need to be properly washed and sanitized if ready to eat food products such as salad products are to be stored in the sink.
To reduce the chance of contamination, salad should be washed and stored in containers or bowls.

Observation: Bait box was placed outside of the walk-in cooler door. The use of rodent poison is not permitted inside food premises.
Corrective Action(s): Remove the rodent bait box.

304 - Premises not free of pests [s. 26(a)]
Observation: Old rodent droppings noted in the following area:
- underneath the bulk pop syrup station in the back of the kitchen
- underneath crate boxes for oil containers.
- underneath shelving units by the walk-in cooler.
Small amount of rodent dropping were also noted in the walk-in cooler along the wall where the beer kegs are stored.
Facility has a contract with a pest control company.
Corrective Action(s): Operator needs to work with pest control company to identify potential entry points for rodents and have the gaps properly sealed.

Comments

Routine inspection conducted and the following were noted.
All cooler units at 4C and equipped with thermometers.
Walk-in freezer at -18C.
Hot holding of food products were at least 60C.
The practice of pooling of fresh eggs are not being done.
Low temperature dishwasher achieved a final rinse concentration of 100ppm. Ensure chlorine test strips are available to test dishwasher unit daily.
Quats sanitizer at 200ppm.
Daily cleaning is being maintained; however, more thorough cleaning is needed to prevent and help eliminate pest problem. Hard to reach areas such as: around the dish pit, around the cook line, and dry storage area.
