Observation (CORRECTED DURING INSPECTION): Milk and cream stored inside the undercounter preparation cooler had internal temperatures ranging between 8C - 11C. The operator informed that these items were moved there before the rush hour (less than 2 hours ago). They were originally stored in the other cooler.
Corrective Action(s): The milk cartons and cream bottle was moved back to the other cooler. Ensure cold potentially hazardous foods are stored at 4C or less to prevent the growth of pathogens which can lead to foodborne illness.

Observation: The water tray of the ice machine had build up of mold/mildew.
Corrective Action(s): Stop the use of the ice machine. Thoroughly clean and sanitize the ice machine including the water tray to ensure food safety. Date to be corrected by: July 19, 2021.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): The bleach spray bottle near the ware washing sink contained a very strong chlorine residual solution. The inspector's test strips were bleached out.
Corrective Action(s): The operator diluted the solution to achieve 200 ppm chlorine residual. Ensure test strips are used to measure the strength of the sanitizer. Too strong of a solution can chemically contaminate food and food contact surfaces.

Observation: Undercounter preparation cooler had an ambient temperature of 9 degrees Celsius.
Corrective Action(s): Do not store potentially hazardous foods inside the cooler until it can maintain 4C or less. Have the cooler repaired. Date to be corrected by: July 19, 2021.

Comments

Routine inspection of the food facility conducted.

Temperatures:
- Domestic cooler: 2C.
- Display cooler: 4C
- Single door freezer: -18C

All units had accurate thermometers.

Sanitation:
- 2 compartment sink was equipped with functional plugs.
- High temperature dishwasher achieved 73.4C at the dish surface after the final rinse cycle. The dishwasher also uses chlorinated detergent and measured to have 50 ppm chlorine residual.
- Sanitizer spray bottle at the front of the facility had 200 ppm chlorine residual.
- Hand washing sinks were adequately equipped with hot and cold running water, liquid soap, and disposable paper towels.

Storage:
- Stainless steel racks are used for dry storage.
- Chemicals are stored in a separate area away from food (under ware washing sinks).
- Food is stored at least 6" off the floor to facilitate cleaning.
- Items are covered when stored inside coolers.
- Food grade containers are used.

Pest Control:
- No signs of pest activity noted at the time of inspection.

Administration:
- Staff and operator have valid FOODSAFE level 1 certifications. At least one certified staff member is always on site during operational hours.
- Permit is posted.
