Routine inspection:
-minor additions to the menu - copy obtained for the health file
-discussed FoodSafe expiration dates
-handsinks fully equipped and accessible - good handwashing observed before serving food
-bleach spray bottles at 200ppm chlorine
-all front hot holding units and back rice cooker at 60C or higher
-high temperature dishwasher checked internally at dish level with probe thermometer at 72.5C
-premise clean
-all coolers at 4C or less
-main freezer and ice cream freezer at <-18C
*temperature logs are in use for coolers and hot holding units but some days are missing - ensure when the manger is away that someone else is in charge of temperature logs
*no signs of pests - some bags of recycling found in the back storage room, ensure pop/juice cans are removed every day or two, especially in the summer, to prevent fly infestations
-discussed use of leftovers and cooling procedures with manager
