203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Large beef roast >12lbs was cooled whole, tightly sealed in plastic wrap and stored in the cooler for cooling, for 16-24hrs. Internal temperature of the roast was between 4.9C-5C.
Corrective Action(s): Note that whole roasts this size cannot adequately cool if left whole and covered.
Ensure roasts are cut up after 30min-1hr of cooling and cooled in small portions.
Roasts, during cooking, should always be monitored with probe thermometer to ensure they are fully cooked.
This roast should be discarded and not offered for consumption.

Observation: 1. Inside boiler room between the walk in freezer and walk in cooler, build up of construction materials and debris. Evidence of black, larger rodent droppings.
2. Dishwashing area - wall beside garbage, on clean side of dishes - food debris on walls
Corrective Action(s): 1. Clean up rodent droppings and monitor if they appear again. Follow up with pest control as needed.
2. Clean and sanitized the area as part of daily maintenance and cleaning.

Observation: 1. Inside small, black chest freezer beside grill/fryers - plastic top is chipping and cracked badly, smaller pieces of plastic and insulation can break off and fall into food.
2. Tile above dishwasher is peeling and flaking off.
Corrective Action(s): 1. Repair and replace this plastic part of the inside lid.
2. Repair or replace this tile to ensure all surfaces are cleanable.
