Observation: - 2 compartment warewashing sink was replaced with a single compartment sink. This alteration was not approved and this sink is not adequate.
Corrective Action(s): - 2 compartment sink must be installed. Prior to making any further changes, Operator must submit revised plan and specifications for a 2 compartment sink to be installed. [Correction date: 29-March-2019]

Observation: - Alterations were made to the kitchen without approval from Environmental Health Officer. 2 compartment warewashing sink was replaced with a single compartment sink. Operator had previously reported no changes were being made to the kitchen.
Corrective Action(s): - Alterations to a food premises must not be made unless the plans and specifications have been approved by a health officer. The change from a two compartment sink to a one compartment sink is not acceptable and needs to be addressed as per code 303.

Observation: - Hole noted in wall of dry storage room adjacent to bins where apples are stored.
Corrective Action(s): - Cover/fill hole to prevent entrance/harbouring of pests. [Correction date: 20-Mar-2019]

Observation: - Dust and miscellaneous debris (metal parts, food debris) noted on floor of dry storage room under wire shelving.
Corrective Action(s): - Thoroughly clean floor removing all dust and debris. [Correction date: 20-Mar-2019]

Comments

- General sanitation satisfactory aside from the floor of the storage room as noted in violation above.
- Handwashing sink supplied with hot and cold running water, liquid soap and paper towel
- High temperature dishwasher operational and met sanitizing temperature required. Final rinse was 79C at dish surface
- Coolers were operating at acceptable temperatures:
- Kenmore fridge/freezer: 1C
- Whirlpool fridge 4C
- Freezers were maintaining product in a frozen state.
- Thermometers were present in coolers and freezers. Temperatures are monitored and recorded daily. Records were up to date.
- Bleach present for sanitizing food contact surfaces. Bleach solution mixed daily. Mixing instructions posted.
- Kitchen staff holds valid Foodsafe level 1 certificate. Certificate present and valid until Aug. 2023
Note: Kitchen cabinets, flooring in kitchen and counters were also changed. Surfaces are smooth and washable.
