Premise is sanitary. No signs of pests. Hot and cold water available. Hand washing sink with liquid soap, paper towels and running water in use. 3 compartment sink in use. QUAT sanitizer in use at 200 ppm. Note: Ensure QUAT sanitizer in use at is between 200 ppm to 400 ppm in concentration. Products are protected from contamination. All coolers at 4C and below. Temperature logs in use good. Storage and fermentation containers are sanitary. Bulk wine containers are used once then recycled. A new one is used for each batch. Operator inquired about information using cotton covers. Operator will send information to EHO for review. Facility in compliance and well maintained.
