Observation: Bus pan of food in the freezer were covered with a garbage bag - directly contacting the food.
Corrective Action(s): Discontinue the practice of using garbage bags to cover foods - garbage bags have chemicals which may contaminate foods.

Comments

-Kitchen is currently used Sunday and sometimes on Wednesday.
-Minimal amounts of food stored in the kitchen.
-Kitchen upright cooler was at 2C.
-Back area cooler was at 8C - cooler is currently not used for the storage of potentially hazardous foods.
-Back area freezer was at -18C.
-High temperature dishwasher had a final rinse temperature of 72C on the dish surface on consecutive cycles (minimum of 71C required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer was tested at 100ppm to 200ppm bleach and properly labelled.
-General sanitation good at the time of inspection.
-Facility is serviced by a professional pest control operator on a monthly basis.
-No signs of pests noted at the time of inspection.
