Comments

Observations During Inspection:

- Coolers achieving temperatures of 4 C or less
- Freezers achieving temperatures of -18 C or colder
- Hot Holding achieving temperatures of 60 C or higher
- Sanitizer solution in spray bottle in front and in bucket in the back at concentrations of => 200ppm
- All food items covered in cooler and freezer units
- Light covers in place
- Cooler handles and seals in good sanitary condition
- Slicer is in sanitary condition
- All containers used to store lids/utensils/etc. in good sanitary condition
-No cockroaches noted, pest control is still servicing - ensure to monitor and keep the sanitation level up
* Paper copies of Log sheets to be kept on site until each routine inspection (temp of all coolers , hot holding at least twice daily, dishwasher temp at least once daily, sanitizer concentration at least once daily)

Storage room:

* provide more shelving to store all products at least 6 inches off of the floor.
* No Thawing to be done at room temperature

Covid 19- Mask mandate is being followed.
