Observation: - Some food items in coolers and freezers were uncovered.
- An opened bag of road salt was stored in the food dry storage room near an opened bag of flour.
Corrective Action(s): - Ensure all food items are stored properly covered to protect from potential contamination.
- Store chemicals and non-food related items in separate areas from food.
Correct by: Immediately.

Observation: Grease and food debris accumulation noted in several areas:
- Underneath stoves/grills/fryers
- On/in drawers, sides, and doors of stoves/grills/ovens/fryers
- Insides of prep coolers
- On all cooler and freezer door handles
- Dry ingredient bins and lids
- Base of dough mixer and base of meat slicer
Corrective Action(s): Deep cleaning in kitchen is required. Remove any dirty unused equipment, or keep all equipment in sanitary conditions. Ensure deep cleaning is done on a weekly basis at a minimum.

Comments

- All other hand washing sinks were properly supplied with liquid soap and paper towels.
- Food-contact surface sanitizer available in spray bottles at 200 ppm Quats. Wiping cloths in front server area were also stored in 100 ppm chlorine solution.
- Low-temperature chemical dishwasher dispensed 100 ppm chlorine to the rinse cycle, detected at the dish surface after the rinse cycle.
- All coolers were maintaining temperatures of 4C or colder.
- All freezer temperatures were satisfactory
- All hot-held food items were measured at 60C or hotter.
- Dipper well in use for ice cream scoops.
- No signs of pest activity noted at time of inspection.

**General sanitation requires improvement (see violation code 306 above). Ensure deep cleaning in ALL areas and for all equipment is done on a weekly basis.
