Observation: Thermometers were not present inside the freezer component of the domestic freezer in the front area and the domestic cooler (both cooler and freezer components) in the back area.
Corrective Action(s): Ensure all refrigeration units are equipped with accurate thermometers; Correct within 1 week. In the meanwhile, use the probe thermometer to monitor the temperature inside these units.

Comments

Liquid soap, hot and cold running water, and paper towels were available at the handsinks in the front and back preparation areas.

Coolers were 4 degrees C or colder.
Freezers were -18 degrees C or colder.
Temperature logs were being maintained.
Probe thermometers were available on-site.

Chlorine residual after the dishwasher final rinse was 50 ppm.
200 ppm QUATS sanitizer was available in the spray bottle.
Chemical storage room was organized.
Please clean the mop sink basin during the next deep clean to remove debris.
Food storage areas were clean and organized.
Washrooms were clean and well maintained.
No signs of pest activity were noted at the time of inspection.

The food safety plan and sanitation plan for the baked items, soups, and sandwiches was revised and approved during the inspection. Note: The operator has not started the soups yet and mentioned that the splashguard at the back handsink fell. Please re-install a splash-gaurd at the 3-compartment sink and designate one compartment as a handsink.
