Observation: During time of inspection, some spices in kitchen facility, were not kept covered
- Pots and pans stored underneath sinks

Observation: During time of inspection, the following observations were made:
1) moderate/ heavy grease accumulation observed on metal slats of commercial fume hood, also due for professional service
2) mould accumulation observed within plastic housing in ice machine
Corrective Action(s): 1) Ensure that fume hood is professionally serviced
Ensure that slats are removed, cleaned and degreased on a regular basis by staff
2) Ensure that ice machine is taken apart and plastic is cleaned, ensure to maintain ice machine on regular basis

Comments

- All handwashing stations equipped with hot/cold running water liquid soap and paper towels
- All temperatures meet health requirements:
* Walk in cooler at 4C or below
* Chest freezers at -18C
- Chlorine sanitizer solution available in spray bottles, concentration at 200ppm
- Low temperature dishwasher available, concentration of chlorine residual at final rinse at 50ppm
- No evidence of pests detected during time of inspection
Note: Ensure Pest Control Operator reports are available during next inspection
- General sanitation of facility - OK (continue to focus on hard to reach areas)
